Cucumber Tomato Avocado Salad
Ingredients:
- 1 lb Tomatoes Roma, seeded and chopped
- 2 Cucumbers English or hot house, sliced
- .5 c Red Onions sliced
- 2 Avocado diced
- 2 Tbsp Olive Oil extra virgin
- 2 Tbsp Lemon Juice from 1 medium lemon
- .5 bunch Fresh Cilantro chopped, about 1/2 cup
- 1 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
- Drizzle with olive oil and lemon juice. Toss gently to combine. Just before serving, toss with sea salt and black pepper.
Notes
If you aren't keen on cilantro, fresh dill is a good substitute!
