Easy Silky Gravy with Cassava Flour {Gluten and Grain-Free, Dairy-Free Option}

Whip up this perfect homemade gluten-free gravy in 5 minutes. This silky gravy recipe is made using cassava flour and is delicious over mashed potatoes.

I don’t know about you, but I am SICK of boogery gravy. You see, I’ve been gluten (and mostly grain) free since 2012 and the only options for thickening gravy that even worked remotely well were arrowroot starch  and tapioca starch.

 

I’ll never forget one time when I make turkey gravy and my husband commented that the texture was like boogers…I laughed so hard because he was RIGHT! The texture was slimy, sticky, and not that pleasant.

 

Sure, you could use other gluten-free flours, but frankly, they either didn’t thicken the broth (almond flour) OR they thickened it so much that it turned into a glob (coconut flour — and it tasted like coconut gravy — GROSS!).

 

Up until last year, I stuck with arrowroot and tapioca starches for my gravies, desire the texture issues. But then I discovered a new flour — a total game changer in my kitchen.

 

Enter cassava flour! 

 

Cassava flour is the only gluten and grain free flour that can, in many cases, be used as a 1:1 replacement for traditional wheat flour.

 

The first time I made gravy, I was STUNNED at how smooth and silky it turned out. Now, it’s my go-to for thickening gravies and sauces.

Some common Questions on How to Thicken Gravy:

Why is my gravy watery?

 

You’ve added to much water/stock.  In order to fix this, take 3 to 4 tablespoons of flour and mix with 1/4 cup of water to make a paste.  Start whisking this into the gravy mixture to thicken.  Repeat if necessary.

 

How to get smooth gravy without lumps?

 

Making a roux or slurry is key to silky gravy.  Pre-mixing the flour with water will eliminate lumps from gravy.

Prep Time 2 minutes
Cook Time 3 minutes
Total Time 5 minutes

Ingredients

  • 4 tbsp butter (or other fat of your choice – use coconut oil or bacon grease for dairy-free)
  • 2 1⁄2 cups chicken broth (you can also use beef or vegetable broth if preferred)
  • 4 tbsp Anthony’s Cassava Flour
  • 1⁄2 tsp sea salt
  • 1⁄2 tsp pepper

Instructions

Melt butter in pan over medium heat.

Add cassava flour, stirring constantly for 2 minutes, you want the mixture to turn light brown but not burn.

Add broth, salt and pepper and continue to stir for 3 minutes, sauce should be getting thicker.

Spoon over your favorite food and enjoy!

    Just tried cassava flour! First use is with milk gravy and it’s so easy and soooo delicious!! I found your video to watch for backup. 😁 i think I’m going to love this flour! Going to try it with other recipes!

    I am looking toward cassava to prepare turkey gravy on Thanksgiving. Today I am making my butter biscuits, and the complement of sausage gravy my favorite breakfast. Cassava flour is my ho to for wheat replacement. I am drug free since January in my dietary life change in my battle with type 2 diabetes. What I used to eat caused my sickness. I love eating thank you for your encouraging post, and the comments. I will be incorporating milk soaking the flour 2 hours in a bowl with cassava flour mixed in….my cassava biscuits are a experiment also….soooooo good in my black skillet…

    The video doesn’t show the heating the butter / shortening in the plan. I’ve known how to make gravy since I was 6 and now I’m 66 LOL. Someone who has never made gravy before may try to cook along with video and will end up with burnt flour.

    Only recently did I discover “Cassava” flour at a local “Grocery Warehouse/Scratch & Dent” store as well call it aka salvage, I used it for my “Thanksgiving” biscuits along with a flour blend mix and the biscuits came out incredible. I can’t even imagine how much better they’ll be with this recipe. I’m going to attempt Rice Milk, mostly because we are out of milk and are not a dairy free household plus I’m having to make the milk as I type this comment LOL. I am psyched the biscuits and gravy this morning will be at least gluten-free. Thanks for the recipe, I’ll let ya know how goes. Cheers!!!

    I happened to have some cassava flour and beef broth handy, so I thought, “Why not?” It was really easy, really quick, and really delicious! I used olive oil for the fat because I’m avoiding glutens due to having a fatty liver, but olive oil is okay for that. I also tossed in a tablespoon of Worcestershire sauce because I had that, too. At first I thought it wasn’t going to thicken, but all of a sudden, boom!, it thickened up like magic. I would recommend this to anyone avoiding glutens. P.S. My liver is screwed up, but my heart is fine. That’s why I was able to use a lot of salt, so it wouldn’t taste all bland.
