Zucchini Pasta with Avocado Cream Sauce
Ingredients:
- 4 Zucchini medium, spiralized
- 1 Avocado
- .5 Cucumbers chopped
- .5 Lemons juiced
- 2 cloves Garlic
- 2 tbsp Full Fat Canned Coconut Milk
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 1 c Cherry Tomatoes
- .5 c Fresh Basil about 8 leaves, thinly sliced
Instructions:
- Place zucchini spirals in a large bowl.
- In a food processor, combine the remaining ingredients except for tomatoes and basil and process until smooth.
- Toss the zucchini with the avocado sauce until fully coated.
- Garnish with cherry tomatoes and basil leaves, season with more salt & pepper to taste.
